How Humans Made Broccoli

Around two thousand years ago, in ancient Roman times, a people known as the Etruscans, who lived in Italy, started experimenting with a plant called wild mustard.

This plant flowers every second year, bearing a few yellow flowers on the end of a long stalk.

The wild mustard plant stores food in its leaves in the first year to give it the energy to flower.

For this reason, humans started using its leaves as a healthy source of food to eat.

By choosing plants with tastier leaves, humans created kale and collard greens.

Later, plants that make a big leaf bud at the end led to the first cabbages.

Other plants were chosen for their side buds, becoming Brussels sprouts.

Somewhere along the line, people started eating the flower buds chose plants with larger and tastier buds to breed from.

Gradually, people created plants with large white flower heads (the first cauliflowers) and plants with large green buds (the first broccoli).

People have carried on breeding broccoli to create different varieties. In 1993, a Japanese company bred broccoli with Chinese broccoli to create broccolini. 

Because broccoli was created over centuries by careful breeding and not in the lab, we do not consider it genetically modified. However, it is a man-made vegetable.

What Does Broccoli Taste Like?

The taste of broccoli varies depending on whether you eat it raw or cooked and how you cook it.

In an exciting twist, the taste of broccoli also depends on you! Different people have different taste buds according to their genes, so we don’t all taste broccoli the same way.

Raw broccoli tastes a lot like raw cabbage but with less bitterness.

It also has an appealing crunch but may be a bit too stringy. How cooked broccoli taste depends on how you cook it.

Some people have horrible childhood memories of broccoli boiled to a khaki-colored mush that tasted disgusting, almost like rotten eggs. This taste is because of sulfur in the veggie.

But if broccoli is blanched or steamed, it keeps its bright green color and an appealing grassy, slightly sweet taste with only some bitter aftertaste.

You can even roast broccoli or stir-fry it, and these methods bring out the sweetness in the taste.

Because people have variations in their genes, not everyone tastes broccoli the same.

A particular variant of one of our genes causes people to taste certain bitter chemicals more than other people do.

Suppose you only have one copy of this variant. In that case, you will notice some bitterness in broccoli but will still enjoy it if it is prepared correctly. 

Suppose you are one of the approximately 20 percent of people who have two copies of this variant. In that case, broccoli will probably taste horrible to you no matter how it is cooked.

Can You Eat Yellow Broccoli?

If your broccoli is turning yellow, it is a sign that it is wilting and losing its freshness.

While you can still eat it, you won’t like it because it becomes unpleasantly strong and bitter.

It also doesn’t have as much goodness as fresh broccoli and has lost a lot of vitamins.

If it only has a few yellow spots, cut them out and cook the rest as soon as possible. Throw it out if it has gone entirely yellow or started going slimy.

To prevent broccoli from going yellow, keep it in the fridge and use it within three to five days. 

If you need to keep it for longer, you can freeze it. Wash it, pour boiling water over it to blanch it, cool it with ice water, put it in an airtight container.

Broccoli will keep for up to a year in the freezer.

How To Reheat Broccoli

Cooked broccoli will keep for three to five days if stored in the fridge in an airtight container. You can then reheat it when you want to serve it.

Although you can reheat broccoli in the microwave, we do not recommend doing so, as it will turn it into mush.

We suggest reheating either in an oven or in a skillet to keep the nice crisp texture of perfectly-cooked broccoli.

To reheat your broccoli in the oven, preheat the oven to 350 degrees.

Spread the cooked broccoli on a baking sheet, drizzle it with olive oil, put it in the oven, and bake it for 5 minutes at 250 degrees.

When it sizzles, it’s ready.

Alternatively, you can give the broccoli a quick heat-through by stir-frying it for a few minutes. Doing so ensures that you don’t accidentally overcook it and burn it.

If you must reheat the broccoli in a microwave, only heat it to 165 degrees for a couple of minutes.

How Many Calories In Steamed Broccoli?

If you steam broccoli, you do not add any calories to the vegetable, unlike cooking it in oil or butter, which adds calories.

A single serving of broccoli is a cup of raw or cooked broccoli. A cup of steamed broccoli contains just 31 calories, making it an ideal food if you want to cut your calorie intake. 

Those 31 calories are made up of 2.5 grams of protein, 6 grams of carbs, and just 0.4 grams of fat.

The carbs in broccoli are mostly sugars (1.5 grams) and fiber (2.4 grams). Fiber is excellent for your gut health, and doctors recommend getting plenty of it in your diet.
